This is why I gave up turkey hunting, and put my 3D shooting on hold. Went this past week fishing with a good friend of mine and another fellow, first morning checking lines, she was on. Tipped the scales at 80lbs. This is the biggest catfish anyof us ahve ever caughthttp://img.photobucket.com/albums/v463/okgator/HPIM0562.jpg

Junkie, best way I have seen is the way the guys I fish with taught me. Hang it, cut tail, bleed it. Then filet the sides and belly meat off, don't skin it. Lay filets skin side down, on a fish this size, quarter it. Anyways, cut in till you are about 1/16th" to 1/8th" from skin, and then cut the white meat off, leaving red meat on skin. Trim off any red meat left, and ANYTHING with a yellow tint. Cut into chunks, place in water, and "rinse" until meat is white. This technique takes some time to get used to, but is ALOT easier than skinning, and trimming off red meat
