.021 is the most popular size but it will depend on material, strand count and nocks
I've never seen a 700lb bow LOL. I read an article one time that said some bows can produce 300lbs of force during the shot cycle.
How much are you looking to spend? We have a couple box full of old one that we've replaced.
I'd get a set on order and carefully shoot those ones until the new ones arrive.

We're seeing great results with the X material all the way around.
We've made strings for a handful of them so far but I haven't been seeing any either.
I'd give a look to the CBE vertex. Very nice sights.
I hunt with 10 on the front and 6 on the back but you can alter everything with weights if needed.

There is a perfect height for a peep but it will not be the same for every shooter. There are too many variables when considering this.
