I've been into deer processing now for 10 years...I have a nice vac sealer, meat grinder, sausage stuffer, dehydrator, smoker. I'm looking for a meat slicer that is stainless. Last night I bought a Cooks meat slicer for 60.00 from JCPenny's and returned it this morning as the meat guard was slipping and varying the thickness of the meat for jerky. Then i looked real close and saw that the blade was acutually cutting into the plastic hand guard and putting black plastic flakes on the meat. I just rinsed each piece, but now I really want a decent meat slicer. One that I can use to make jerky at least twice a month or so.

I've seen the rival's on ebay and they seem to be made all chrome or stainless, but the price point is around 40.00 with 15-30.00 S/H. Most of these are used so I'm concerned if I buy a Rival then it might not be what I want it to do or hold up to any prolonged use.

I don't own a deli and won't be cutting everyday so please don't direct me to something like a Hobart or globe as they are above what I want to spend. Jerky is expensive to buy and my family loves it. I priced it at wal-mart and other places and it comes to about 1.25 an ounce. Right now I have 4 lbs of meat marinating in mesquite. That should give me about 1 1/2 lbs of dried jerky. Or 32.00 in jerky...so with that said I don't mind spending up to 100.00 for an appliance that i will use about 24 times a year.

I'm looking for a stainless or some type of metal slicer so that I won't have to worry about plastic and breakage...the adjusting has to be safe and not moving with pressure from the meat. What do we have as far as my wish list?

2 month ago I was looking for meat slicer for myself...I read a lot of reviews and I can suggest you to check out EdgeCraft 610 Chef’s Choice Premium Electric Food Slicer. I got it for about $120 and love it. Nice quality. By the way this website has a lot of useful reviews of meat slicers. Highly recommend it.
 
I bought a slicer on ebay back in the fall. Ive used it once so far and what I can tell you is two things.

You want the carridge to have some weight on it, not all plastic and you need some way to attach it solid to the counter. It also helps if you buy one that has some pretty decent speed.

Mine does the chore but its nothing like you see in the deli where they just whack away
 
I got one at Cabela's last June. It was on sale for $80. Watch for sales.
 
You have a grinder. Try out a Jerky Cannon/shooter before you spend the money for a slicer. It is hard to tell the difference once it is dried. I have an all plastic one that has been replaced by a LEM Brand that I found new at a yard sale for $8. If you want the plastic one I'll send it to you for the price of shipping.
