I have been using an old buck knife that does an ok job but have a little extra cash to explore a nice knife in that 100.00 range. Been looking at the ESEE brand 1095 carbon knife for awhile. Seems easy to sharpen and hold an edge well. I se ethey have a new ESEE 3HM model out that might work well. I also see the IZULA II which looks good but might be on the smaller side.

Interested if anyone uses either the 3HM or IZULA II and has feedback. The 3HM is about 8.25 inches while the Izula is around 6.75 I believe.



Any other 100.00 options are welcome as well.

i dont think field dressing a deer is something that really requires a top end knife. its probably one of the least taxing duties an outdoor knife could face, so im sure it would work. id be more worried about the blood rusting out my $100 knife than anything else.
 
I really like my knives of Alaska set with the white tail hunter and caper. The white hunter is d2 steel and the caper 440c. I use the caper for 80% of the work. I process all my own deer. I bought my buddy a elk hunter profile for helping me on a hunt and like that profile a little more than than the whitetail

Everyone will recommend their favorite knife and most will be a good choice. However, specifically referring to your question, I own and use a Rat Izula as a neck knife and have used it on game. The steel sharpens easy and the drop point does the job. I really love it.
 
I've been using my Izula for about a year, I've dressed 1 deer, skinned a yote, and a bit of small game with it, I personally love it! Its light, durable as all hell, easily sharpened and holds a good edge. Love the sheath, I like mine as is, plain without the scales, easy to handle and easy to clean.

Benchmade, Buck, even Mora take your pick. Any thing short of a true Scandinavian grind in a decent steel and heat treat will work. Generally a a saber grind to full flat grind will work. Carbon steel vs. stainless will work too as long as it's a quality steel.
 
Esee makes great knives but maybe not the best for hunting. 1095 is not the best at holding an edge but good at being tough ie not chipping etc. Esee runs I would guess around 55-57 RC . Ideal for those who want to use their knife to chop wood but no so great on the edge holding.
Have you considered Cabelas Alaskan guide knives by Buck? I have no personal experience with KOA'S knives but I am a fan of d2 in a hunting knife.

I have the regular izula. It is my EDC knife. I would skin a deer with it all day long. I will be buying more of there knives.
