With your draw length you can shoot just about any head you want. I prefer 125 grain heads because they are usually built with better / thicker components. Some use steel instead of aluminum on the 125 models..
As far as arrows go GT hunters are a good choice for standard size arrows. 50 or 75 grain insert on a 250 spine arrow cut 1 inch infront of your rest would be money if you are drawing 70 + lbs.. Go kill a big one...
