My father inlaw shot a moose in some thick willows last fall. the meat was bitter and had that willowy taste. it was horrible. I shot my moose in an aspen forest and it had a much milder leafy taste.

I hear bear and pig really take on the taste of their food. Never try and eat bear that has been feeding on dead salmon!
