I'm new to the sport of bare bow archery and as a tinkerer I want to make my own strings and construct my own arrows. My question is why do string jigs setup with 3 or 4 posts instead of just 2? The ones I've see most have 4 posts that will rotate to serve the ends. Is there a reason you can't just go around 2 posts?

If you are serving the end loops it's just easier to do it with a 4 post jig. That is the only reason to have a 4 post jig. If you are doing tag ends then there is zero reason for having a rotating 4 post jig. I personally have a 4 post jig but I seldom if ever do the end servings on my compound bow strings. Recurve strings are a horse of another color. Absolutely use the 4 poster for those.
