The bolts I got with my "new to me" crossbow look straight fletch. Can I re-fletch with a straight angled offset? Blazers with a helical? OR if you have to go with a straight fletch what about using feathers for more resistance.

You can put some angle on yer fletch an possibly even helical since the Blazers are so short. The thing to watch is that ya don't put so much angle or helical on that it drags in yer rail slot. Not all bows can shoot Blazers cause of their height, they can't lay right in a shallow track, an tend to lift.
I would avoid feathers, they're fine for verts (my opinion) but vanes are superior for crossbows.
My Victory Xbolts have a slight helical vanes. I prefer straight but these work well so I will keep using them.
