I like to wrap the front legs around the head and tie and then run the rope to a stick for a handle and drag with two guys when possible. This helps keep the fron legs from hanging up. How do you do it?
I quarter mine out in the field too. Take a pair of latex gloves and a few trash bags, skin out the quarters and the back straps and leave the carcass for the foxes. Only takes ten minutes or so, and beats the hell out of dragging all that way. A head lamp and a frame pack help out a lot too.
Use a four wheeler during gun season though.
