I much prefer side plates. The narrow riser tends to fall in the same spot every time. I could shoot directly off the riser with the same results but the side plates shoot the same and look much better. I have never tried the tennis tape but wonder if it would be slick enough to let the bow find it's way to the same location in your hand. My first suggestion is to pull the stock grip off and shoot your bow some and see what you think.

I like the standard plates on my Supertec, and of the Hoyt's I own, it's the best feel of any grip.

I shoot all my Hoyts off the riser. Take the wood right off...there's a reason the "target" models come witha super-slim handle, minus the sideplates or one-piece...

Side plates for me. Nothing wrong with the full grip, but I prefer to remove it and add side plates.
