Is one rest bolt sufficient to secure drop away rest to riser ?

yes, not many bows accept 2 bolts anymore.

I've never had a problem with only one. Some drop away rests have the small set screw. I use that as well, but it will leave a mark on your riser. I also put a couple drops of thread lock on the bolt.

One bolt with blue loc-tite has worked fine for many many years.
