I slice the breasts into strips. Fry the breast up with some peppers in a little olive oil . Spices: Cajun and some garlic cloves. Quirting them with the juice from about a half of lemon. And making them into fajitas.
One that we do a lot is to cut the breasts and legs up into little chunck and put them in a bag with some shore lunch or whatever breading you want and fry em up in a pan with some oil in it. Theyre great for kids especially but everyone seems to love em. Dip them in honey or BBQ if anything at all.
Mix equal parts honey and heinz57 in a bowl. Cut pheasant into chunks or cubes. Let soak for an hour in the mixture. Skewer with tomatoes, peppers, and vidalia onions and grill, basting with the sauce.
Wash down with a fine vintage McEwans or Smithwicks:darkbeer:
