I love venison but I will take bear meat over venison. The first bear I had was 13 yrs old and very tough. That was from a buddy's bear I put him on and I thought he gave me the round steak from it. Since then I have shot 3 bears myself and they have all been under 6 yrs old and delicious. Matter of fact that same buddy and I were ice fishing on Red Lake and I cooked some chops up and he couldn't believe it was bear. I told him I thought he was trying to screw me when he gave me his bear. I also had cooked some for my bro-in-law who doesn't hunt but loves steaks and he thought it tasted better then steak.

As far as the difference hunting the two there is alot. I am introducing a friend to bear hunting this year and we were setting him up in the "scary spot" which is the way his brother described it when he hunted it. You see it is a dark section of woods but you also have to go through some thick brush to get to it. Well he didn't understand the difference of walking out from bear hunting versus deer hunting. I explained to him that when a bear is use to a bait pile he will protect it from other bears so if he is walking in or out of the brush a bear might mistake him for a trespasser on his bait pile and could charge him through the brush. I think it rattled him quite a but and we will see if he shows up for hunting.

Many areas do not require the salvage of bear meat...big mistake! It can be some of the most delectable game meat you'll taste. Old bears, or bears that feed heavily on fish can be an exception.

Still, if you find a good meat processor who knows how to make brats and cased sausage or pepperoni, you can enjoy any bear you shoot. I've had women that wouldn't eat a moose steak hound me (no pun intended...) for bear sausages and brats. Younger bears taken in fall berry patches can provide great roasts, and bakers say that some of the best pie crusts are made using fat rendered from black bears...light and flakey....yum!

The outfitter i hunted with this spring didn't want anything to do with the meat. His son said at the breakfast table " do you see what we feed those things" as he was saying that i pointed out to him he was eating bacon and asked him what they feed THOSE THINGS. From the video i thought hunting bears over bait was going to be a piece of cake. Boy was I wrong. Those bears were smarter than any deer i ever ran across.

The main problem with bear meat is most folks don't get it in the cooler fast enough. Most bears are shot in very warm weather and they have this thick layer of fat. There is no waiting till morning to track bears if you want to eat them. If you can't kill it and get it in the cooler within about 4 or 5 hours, the meat will not be good to eat. To me, good bear meat tastes just like venison except it is way more juicey. It is a great shame the amount of bear meat wasted every year.
