A week ago, I caught my first Rainbow Trout of the season at a local lake. I smoked the fish and then froze them for later use. Today, I made a wonderful smoked trout appetizer. This is a great recipe for a quick, elegant and easy appetizer. Make this for your next dinner party and impress your guest!

Ingredients

1 smoked trout
1 small onion
1 tsp capers
2 tbsp Olive Oil
Salt and pepper
A Triple Crème Brei Cheese
Crackers

Sounds good. What kind of trout? Flavors vary a good bit.
What kind of wood smoke? An Apple smoke would be really good with brownies, and I think hickory or mesquite would be good with rainbows, brookies would probably go good with oak or cherry.

I might try an Apple wood brown sliced thin with feta cheese mint basil rosemary and garlic. I'll keep the capers, they go awesome with trout. Do that on a flat bread or toasted baguette, now your talkin.

Or maybe smoked gouda, whole grain mustard, bacon, and smoked rainbows on toasted rye
