Burger into Sausage?

Can you turn venison 'burger' (just ground up with some beef fat added) into sausage? I have some packs of ground that I know I won't get around to eating before I kill a fresh one if it stays in its current state. Now if it were in some form of breakfast sausage, it'd be gone in a week. :wink:

Suggestions? Comments?

Here's what I do... I weigh out equal parts of ground deer meat and the cheapest pork sausage Walmart or the grocery store sells. The sausage is loaded with pork fat and it's actually easier to find than pork fat and not too expensive. The last I bought was about $2 a pound. Mix both deer burger and store bought sausage together really well. When finished you have 2 pounds of sausage that only costs $1 per pound. I usually add additional rubbed sage, hot pepper(optional) salt and pepper. How much is strictly up to your taste.

The finished product patties up easy, holds together great, very little grease in the pan after frying and the flavor is outstanding.

I know this is an old topic, but I've done what you are asking many times. Just defrost the burger meat and mix in your ingredients, then wrap and leave in the refrigerator at least overnight. I've done it and mixed it while it was still slightly frozen and then refroze it, since it's sausage and your fully cooking it I don't worry about refreezing. You can use it right after you mix it, but it's much better after a rest.

black pepper
crushed red pepper
brown sugar
maybe even pour in a little maple syrup

That's about all the ingredients I use when I make sausage. I'll get cheap 80/20 beef, and mix with the deer meat usually 5 to 1. Also, I grind up a little bacon when I'm mixing. Doesn't take much.

Ive taken my 4 lbs of my deer burger meat and mixed in one pound of ground pork. I picked up some breakfast sausage seasoning from Bass pro and mixed it in. I am not disappointed. I can eat that every morning. I just made small patties and vacuum sealed them in pack of 4. There is even a maple flavored breakfast sausage mix. Makes things simple.

If you love sausages that'll be okay but it is kinda rich.Why not try barbecuing some home made kebabs? They are really cheap and easy to do - all you need is some meat pieces (I always use chicken, preferably good quality), some skewers to stick everything on (cheap wooden ones are good and available from most supermarkets etc.) and then it's up to you what else you use!
